Serves 2
INGREDIENTS:
- 2 6-7 ounce halibut fillets
- salt and pepper for seasoning
- approx. 1/2 cup panko breadcrumbs
- 1 tsp minced ginger
- 2-3 Tbs chopped green onions
- 2-3 Tbs olive oil
- 1 large clove garlic, minced
- 1/2 small-medium white onion, chopped
- 2 tsp minced ginger(for mushrooms)
- olive oil for sautéing (for mushrooms)
- 8-10 ounces sliced mushrooms
- 1/3-1/2 cup chopped green onions
- 1-2 Tbs soy sauce (or more to taste)
PROCEDURE:
Preheat the oven to 400 degrees and use your eye to gauge how much of the panko breadcrumbs you'll need to top the fish. Put that into a mixing bowl with a pinch of fresh minced ginger and some chopped green onions and drizzle a little extra virgin olive oil into that and mix it up.

Place the halibut fillets in an oiled baking dish and season those with a little salt and pepper and divide the breadcrumb mixture over the top of each one and gently press that down.
Drizzle a little more olive oil over the top of each fillet and place the baking dish on the center rack of the oven. Depending on the thickness of the fillets, they'll take around 8-10-12 minutes to bake and, while that's happening, take a minute to sauté the mushrooms on the stove top.
Add a splash of olive oil to a large sauté pan and add the minced garlic and chopped onion and the rest of the minced ginger and cook those until they soften up Then add 10 ounces of sliced mushrooms and cook those on high heat. You might have to add more olive oil right at the start.
After a few minutes, when the mushrooms have browned up, add a sprinkling of chopped green onions and a little splash of soy sauce and turn the heat off.
The timing should work out pretty well with the cooking of the mushrooms and the halibut. You want the fish to be pretty firm but still have a little give. Serve halibut right on top of some of the sautéed mushrooms.
HINTS:
Try to use pieces of fish that are the same size and thickness so that they cook in the same amount of time.
